Chef under the Stars 2024 | May 21 – Chef Paolo Gramaglia

Tuesday, May 21, marks the first Chef Under the Stars event at the DoubleTree by Hilton Rome Monti.

Opening this season will be Michelin one-star chef Paolo Gramaglia of President Restaurant in Pompeii, in collaboration with Hotel Resident Chef Mario Santamaria.

The 6-course gastronomic itinerary includes:

La Satura: spelt salad, barley, gogji berries, cranberries, and flying fish caviar
Codfish Panzanella: dish by Chef Santamaria
Tagliatella towards the Orient: squid tagliatelle, citrus, passion fruit, flowering sprouts and ponzu sauce
Pasta a Mare: pasta cooked in seven essences of shellfish, squid chunks, mussels, lupins and sea anemones
Mediterranean to Discover: snapper in tuber and amalfitan lemon sauce, wakame seaweed and summac powder
Lemon Sphere: lemon sphere in orange water, purple cabbage meringue, berries and sugar crystals
