Simone Nardoni is the chef inaugurating Michelin Signature Dinners at the DoubleTree by Hilton Rome Monti.
Born in 1987 in the Veneto region, he won a Michelin star for his restaurant in Terracina in 2021. Here he brings a wealth of experience ranging from northern Italy to Lazio and abroad, takes his cue from tradition and local dishes to twist them and tell their story through his creative and personal eye.
“What I look for in cooking, and especially in my cooking, is the Essence of a taste, without overdoing it, without frills or unnecessary additions. I look at the intimate, the unique, the ingredient is the protagonist, it should be respected and exalted for its characteristics. At the DoubleTree by Hilton Rome Monti I will literally bring my “Essence,” I will try with the dishes I have chosen to tell you something about me, about my vision of taste. It will also be an evening to experiment and have fun.”
